Level 1 - Basic - 1 Day

1 Day Basic Skills - Also Serves as Chef Certification
Living on Live Food Techniques (Cost $125 a person - Duration 7 Hours)
Taught by Joseph Lucier - Certified Live Food Chef, Teacher and Instructor - New England

This course is our Living on Live Food fundamental course that will teach you the basics of the raw food diet through the teachings of the Living on Live Food plan.

In addition to the business opportunities and joining the Alissa Cohen Team, as well as the nutrition discussions, learn to make delicious food with this 1 day intensive.

Recipes and skills covered (changeable due to availability) - Learn Nut Milk Techniques, working with kale and avocados, patés, wraps and sandwiches, pasta and 2 sauces, salad dressing and delicious desserts; tortes and pies:

Morning (3 Hours):
Nut Milk Skills: Delicious Cinnamon Flavored Almond Milk
Salad: Kale Avocado Salad with Sun-dried tomatos 
Entree - Patés: Mock Salmon Paté and Guacamole
Sandwiches/Wraps: Collard Rolls, Cucumber Towers, Romaine Rolls, pepper boats and Portabella Mushrooms with Paté, veggies and sprouts
Dessert: Berry Date Nut Torte with Lemon Glaze frosting for dessert

Lunch (1 Hour): Discussion About Live Foods Nutrition, benefits of Live Foods, benefits of the Living on Live Food Program Certification 

Afternoon (3 Hours):
Salad: Supreme Tossed Salad techniques w/sprouts, spiroolied beets and daikon, flax powder, and other salad veggies and sea vegetables
Dressing:  Red Bell Pepper Tahini Dressing or Ranch Dressing
Entree - Pasta: Zucchini Angel Hair Pasta
Sauces: Zesty Italian Marinara

This course is designed to go beyond the basic food prep and into more extensive raw food preparation. From this course you will be proficient in preparing elegant gourmet meals. In addition to the food preparation, this course will cover how to encourage and help people stay raw and will cover issues dealing with daily raw food living such as environment, friends and family, and traveling while raw. Here is a general outline and is subject to change due to availability of produce.

Day 1 -Recipes and skills (changeable due to availability) - Learn smoothies, dehydration, pasta, salads, soups, cheese technique, sauces and dessert:

Morning (4 Hours) - Italian Cuisine and Pasta Techniques:
Breakfast: Mudslide or Power Up Smoothie
Dehydrating Skills: Falafel (to be ready for dinner)
Entree-Pasta: Daikon or Butternut Squash or Zucchini Al Dente Pasta, Spiroolied Beets or Yam, Zucchini Fettucine  
Sauce: Basil Pesto, Fettucine Alfredo Sauce  
Salad:  Delicious Caesar Salad 

Lunch (1 hour)  - Fettucine Alfredo Pasta, Side of beets, Caesar Salad & Discussion:

Jar Sprouting - Equipment and set up
Sweets - Healthy and Low Glycemic alternatives to processed sugars

Afternoon (4 hours) - Near and Middle Eastern Cuisine:

Desserts: Chocolate Mousse or Mango Pudding
Dehydrating Skills: Crackers and Corn Chips Preparation (to be ready for the next day)

Dinner (1/2 Hour) - Falaffel, Hummus, Salad, Chocolate Mousse: Including Q and A 

Day 2 - Recipes and skills (changeable due to availability) - Continued skills including  dehydration, breakfast cereals, Asian flavorings, Sea vegetables, coconut opening, Mexican flavorings and more awesome desserts:

Morning (4 Hours) - Asian Cuisine:
Breakfast:  Creamy Raw Oats and Muesli
Dehydration Skills - Wrap: Delicious Corn Tortillas (to be ready for dinner)
Rice Techiques: Cauliflower or parsnip Rice for the Nori Rolls
Entree-Wrap: Nori Rolls with sprouts, veggies, avocado, nama shoyu (raw soy sauce) and ginger
Soup: (Learn to open coconuts) Thai Coconut Soup with coconut and Miso Soup
Drinks: Fresh coconut water to drink
Dessert: Tropical Fruit Coconut Cream Pudding 

Lunch (1 hour) - Nori Rolls, Thai Coconut Soup, Coconut Water, Coconut Cream Pudding and  Discussions:

Entree-Wrap: Enchilada - Tortilla stuffed with vegetables and Spanish Rice
Dessert : Crustless Tropical Fruit Pie 

Dinner (1/2 Hour) - Stuffed tortillas, Soup and Dessert: Including Final Q and A and class evaluation - Closing discussion - It's more than just the food, it's a lifestyle.

This course is a continuation of the Living on Live Food instructor certification. If you have completed the Living on Live Food instructor course and feel you would like to teach and certify others as a Living on Live Food instructor, then this is the next step for you!

Pre-requisites - Level I and Level II Certification

Teaching Opportunities - Graduates can teach Level I, Level II and any other non-certification Food Preparation Classes

1 Day In-Home Training and Level 1 Certification       Chef Certification and Live Food Basics

Teachers will contribute for their share of the food. The remaining cost of food would be shouldered and split by the participants.

2 to 3 persons Tuition: $325 each

4 to 5 persons Tuition: $250 each

With 5 persons paid or more: BONUS: Host goes free 

6 to 9 persons tuition: $225 each

10 persons or more: $125

2 Day In-Home Training and Level 2 Certification - Instructor Certification and Live Food Advanced Techniques
